class=\"wpb_wrapper\"><p>La Pancetta arrotolata viene prodotta ancora oggi secondo un\u2019<strong>antica tradizione<\/strong>\u00a0tramandata dai vecchi norcini. Dalla zona addominale del maiale vengono prelevate due strisce di Pancetta di circa settanta centimetri di lunghezza, quaranta di larghezza e uno spessore\u00a0di 5-sei centimetri, per un peso di circa quattro chili ciascuno. I pezzi vengono messi\u00a0<strong>sotto sale<\/strong>\u00a0per dodici giorni in appositi locali. Dopo la salatura si procede alla\u00a0<strong>drogatura<\/strong>\u00a0impiegando spezie varie e la \u201c<strong>pestatina lucchese<\/strong>\u201d, un pesto a base di aglio, pepe e rosmarino. L\u2019impasto delle droghe viene uniformemente cosparso nello strato pi\u00f9 interno della Pancetta laddove la carne risulta pi\u00f9 magra. Infine la striscia di Pancetta viene\u00a0<strong>arrotolata<\/strong>, legata con\u00a0<strong>spago di cotone<\/strong>\u00a0in maniera differente a secondo della stagionatura programmata e cosparsa sulle due estremit\u00e0 di pepe e droghe.
